WHAT IS THE MAGIC?
The corn kernels undergo a special pre-cooking process, with prolonged boiling, before the milling stage, which concentrates all the nutrients and also reduces subsequent preparation times.
WHY IT IS SPECIAL?
All it takes is water, oil and a little salt to make these typical Latin American flatbread cakes in just a few minutes. For Polenta, 2 minutes are sufficient to bring the flour and lukewarm water to the boil and obtain a polenta with a delicate flavour, to serve with meat or fish.
